Ingredients: 1 L dry split green peas (soaked overnight)
2 qts water
1 medium onion, chopped
1 cup chopped celery
1/2 cup chopped carrot
1 ham hock
1 bay leaf
1/2 teaspoon thyme leaves
2 Tbsp chopped parsley
1 1/2 tsp salt
1 1/2 tsp pepper |
Directions: Place all ingredients in a soup pot. Cover and simmer gently for about 3 hours. After that time, remove the ham bone with a slotted spoon and cool. Remove meat and serve with the soup. |
